Halibut Pairing

Halibut Pairing

Last night dinner was yum.

My friend Barbara gave us some halibut the family had brought back from a trip to Alaska.  Googled it to get an idea how to cook it.  I didn't have an oven safe dish big enough to bake it in, so I made do with aluminum wrap to cover it.  The recipe was pretty straight forward.

Place thawed fillets in a little olive oil, lemon juice and garlic, for 10 minutes to marinade.
Then put them in a medium heat oven for 10 minutes, I did 15 because the fillets seemed extra thick.  Glazing once with the left over marinade.  We ended up cooking for an extra 3 minutes or so at 400.

We put these with some broccoli and oven baked potato wedges made with olive oil and season salt.

Paired this up with:  Howard had it with the Boysenberry, I with the White Pyment.
