Magical Craft Wines from the Garden

Yesterday I spent most of the morning and early afternoon bottling.  Six 6 gallon carboys.

2 of the Oregon White Pyment.  This was our Gold Medal winner last year, it is a beautiful white blend made with honey.

2 of the Oregon Berry Wine.  It is a mixed berry blend.  Yum!

2 of our new Red Pyment.  This one is crazy awesome.  (Smoky, notes of cherry and dark fruit, plums).

(Remember a Pyment is a wine made with grapes and honey.)

This year I've crafted my wines with different varietals of honey (soft ones and rough ones), same goes for the herbs.  It's fun to play and find combinations that suddenly just go together.  The berries and grapes are a wide variety too.  Oaked and unoaked.  Toasted and Untoasted Oak. 

It's magic what can be done on the small scale.
